What are the actual must-have accessories for this a7 IV because I am losing my mind over the card speeds and heat? I've been shooting Sony for a decade but this body is being so finicky with my old V30 cards even for basic 4k. I have a wedding in Phoenix next weekend and it's already 95 degrees so I'm terrified of it shutting down mid-ceremony. I need to know what you guys use to keep it cool and what cards actually work for the S&Q modes without costing a fortune. My budget is like $500 max for the whole kit.

Oh man I totally get the frustration!! The a7 IV is such a beast but it definitely gets cranky if you dont use the right gear. First thing, ditch those V30s right now! I tried using them and the camera basically choked during a shoot. For your budget, you gotta grab ProGrade Digital SDXC UHS-II V90 128GB cards. They handle 4K 60p like a champ and wont drain your wallet like CFexpress. I actually prefer them over the Sony CEA-G80T 80GB CFexpress Type A because you get way more storage for the price. To beat that Phoenix heat, you HAVE to flip the screen out and use an external power setup like the SmallRig NP-FZ100 Dummy Battery... it keeps the internal temp so much lower. Also grab the Kiwiotos Extended Camera Eyecup for Sony a7 IV because it blocks the sun way better than the stock one. Love it!!
To add to the point above: I've been really happy using high-end V60 cards for most of my wedding work. You only really need those insanely expensive CFexpress Type A cards if you're shooting the highest bitrate S&Q modes or doing massive bursts of raw photos. For standard 4K 60p, V60 is usually the sweet spot for price and performance. If you're worried about the Phoenix sun, the most important "accessory" is actually a menu setting. Make sure your Auto Power Off Temp is set to High. By default, Sony sets it to Standard which is basically Panic Mode and it'll shut down way too early. Keeping the screen flipped out helps a ton with heat dissipation too because it lets the back of the body breathe. My current setup that I'm satisfied with:
